  • 200 g flour
  • 100 g cold unsalted butter, diced
  • 80 g icing sugar
  • 1 egg
  • 1 pinch salt
  • 200 g dark chocolate (minimum 60% cocoa)
  • 120 ml heavy cream
  • 1 tablespoon instant coffee or 1 teaspoon coffee extract
  • 30 g unsalted butter (for ganache)
  • Unsweetened cocoa powder (for dusting)
  • Chocolate-covered coffee beans or chocolate shavings (for garnish)

Instructions

  1. Make the Pastry: In a mixing bowl, combine flour, icing sugar, and salt until well mixed. Add cold butter and rub between fingers until sandy in texture. Incorporate the egg and form into a ball. Wrap in cling film and chill for 30 minutes.
  2. Bake the Tartlets: Preheat oven to 180°C (356°F). Roll out the pastry on a floured surface and cut circles to fit your tartlet pans. Place the circles in the pans, prick bottoms with a fork. Bake for about 15 minutes or until lightly golden.
  3. Prepare the Ganache: Heat heavy cream in a saucepan until it just begins to simmer. Off heat, add dark chocolate, instant coffee, and butter; stir until smooth.
  4. Assemble: Once tartlet shells have cooled, fill each with ganache and let set in the fridge for about 2 hours.
  5. Serve: Dust with cocoa powder, top with chocolate-covered coffee beans or shavings before serving.
