Looking for a quick, healthy, and indulgent breakfast? These delightful oatmeal banana pancakes are the answer! Naturally sweetened with ripe bananas, they are fluffy, nourishing, and perfect for any occasion—whether it’s a family brunch or a rushed morning before work. With just a few simple and wholesome ingredients, you can whip up a guilt-free treat in minutes.

Ingredients

Scale
  • 2 ripe bananas
  • 2 eggs
  • 100g quick-cooking rolled oats (or coarsely blended)
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • A pinch of cinnamon (optional)
  • A pinch of salt
  • Vegetable oil for cooking (coconut or sunflower)

Instructions

  1. In a large bowl, mash the bananas using a fork until smooth.
  2. Add the eggs to the banana puree and mix until well combined.
  3. Stir in the rolled oats, baking powder, vanilla extract, cinnamon (if using), and salt. Mix thoroughly.
  4. Let the batter rest for 5 to 10 minutes to allow the oats to absorb some moisture for thicker pancakes.
  5. Heat a bit of oil in a non-stick skillet over medium heat. Pour a small amount of batter into the skillet to form each pancake. Cook until bubbles form on top, then gently flip with a spatula and cook until golden brown.
