Ingredients

Scale
  • 4 cod fillets (about 150 g each)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of ½ lemon
  • 1 tbsp unsalted butter
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp whole grain mustard
  • 200 ml heavy cream (or plant-based cream for a lighter version)
  • 1 tsp lemon juice
  • ½ vegetable broth cube (dissolved in 50 ml hot water)
  • Pepper to taste
  • Fresh parsley, chopped for garnish
  • Basmati rice, steamed potatoes, or fresh tagliatelle
  • Sautéed green beans or spinach

Instructions

  1. Prepare the Fish: Rinse cod fillets under cold water and pat dry. Season both sides with salt, pepper, and lemon juice.
  2. Cook the Fillets: Heat olive oil in a large skillet over medium heat. Place the fillets skin-side down and cook for about 2 to 3 minutes on each side until just cooked. Remove gently and set aside on a plate.
  3. Make the Creamy Sauce: In the same skillet, melt butter over low heat. Add shallots and garlic; sauté for about 2 to 3 minutes until translucent. Stir in both types of mustard.
  4. Finish the Dish: Add cream, lemon juice, and diluted broth; mix well. Simmer for about 4 to 5 minutes until slightly thickened. Taste and adjust seasoning with additional pepper if needed. Return cod fillets to the skillet, spooning sauce over them. Cook on low heat for an additional 2 to 3 minutes.
  5. Serve: Garnish with fresh parsley before serving hot with basmati rice, steamed potatoes, or pasta along with a green vegetable like sautéed green beans or spinach.
