Ingredients

Scale
  • 2 cans of tuna in water (approximately 280g drained)
  • 2 eggs
  • 80g breadcrumbs (plus extra for coating)
  • 1 small finely chopped shallot
  • 1 clove of garlic, minced
  • 1 tablespoon of mild mustard
  • Juice of half a lemon
  • 2 tablespoons of fresh parsley, chopped
  • 1 tablespoon of fresh chives, chopped
  • Salt and black pepper to taste
  • Oil for frying (olive or sunflower)

Instructions

  1. Drain the tuna thoroughly and flake it into a bowl using a fork.
  2. Add the chopped shallot, minced garlic, mustard, lemon juice, beaten eggs, parsley, and chives. Season with salt and pepper.
  3. Gradually incorporate the breadcrumbs until you achieve a pliable dough that is not too dry or wet.
  4. Let the mixture rest for about 10 minutes to allow the breadcrumbs to absorb moisture.
  5. Heat oil in a skillet over medium heat. Form small patties from the mixture and flatten them slightly before frying.
  6. Cook each croquette until golden brown on both sides.
