  • 24 ladyfinger biscuits
  • 100 ml apple or orange juice
  • 400 g fresh raspberries (or thawed frozen ones)
  • 2 tbsp maple syrup
  • 250 g mascarpone cheese
  • 250 g plain yogurt (or Greek yogurt)
  • 2 tbsp agave syrup
  • 1 tsp vanilla extract
  • Zest of one lemon (optional)

Instructions

  1. If using frozen raspberries, allow them to thaw completely. Mash 300 g of raspberries with maple syrup to release their juices.
  2. Dip each ladyfinger briefly into the apple or orange juice and layer them in a charlotte mold.
  3. Mix mascarpone, yogurt, agave syrup, and vanilla until smooth. Gently fold in the mashed raspberries.
  4. Alternate layers of soaked ladyfingers and raspberry cream until all ingredients are used, finishing with the cream layer on top.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  6. Carefully unmold and decorate with remaining raspberries and mint leaves before serving.
