  • 400g scallops (with or without coral)
  • 200g sliced button mushrooms
  • 1 finely chopped shallot
  • 2 tablespoons butter
  • 100ml heavy cream
  • 1 teaspoon mild mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon flour
  • 100ml fish stock or vegetable broth
  • 2 tablespoons fine breadcrumbs
  • Salt and freshly ground black pepper
  • Freshly chopped parsley (for garnish)

Instructions

  1. In a skillet, melt one tablespoon of butter. Add the shallots and mushrooms, cooking for about 5–6 minutes until all moisture from the mushrooms evaporates.
  2. In the same skillet, add the remaining butter if needed. Incorporate flour to create a light roux. Gradually whisk in the stock or broth, followed by cream until smooth. Stir in mustard and lemon juice; season with salt and pepper.
  3. Gently fold scallops into the sauce with mushrooms. Pour into a baking dish, top with breadcrumbs for a crisp crust.
  4. Preheat your oven to 200°C (390°F) and bake for approximately 10–15 minutes until golden brown.
